As a small family of just 2 plus pup, we often find we have too much of something. Bananas being one of them. I often make Banana Bread, but sometimes I just don’t feel like making bread. But I really just hate to toss out food. A very long time ago I found the perfect way to use up extra bananas. Being a Cookie Lover, and someone who loves to have an excuse to eat cookies for breakfast – this recipe really works for me. It’s full of great breakfast foods – oatmeal, egg and banana. Any excuse will do! I hope you enjoy them as much as I do!
Banana Cookies
1 cup Shortening
2 cups Sugar
2 eggs
2 1/2 cups Flour
1 tsp Soda
1/2 tsp Salt
1/2 tsp Nutmeg
1/2 tsp Cinnamon
1/2 tsp Cloves
1 1/2 cup Banana, diced
3 1/2 cups Oatmeal
Preheat oven to 375 degrees.
Cream together the shortening and sugar. Beat in the eggs, then blend in the flour, soda, salt and spices. Fold in the banana and oatmeal.
Drop by mounded tablespoonful onto a parchment lined cookie sheet. Bake for approximately 18 to 20 minutes. Cookies will peel off of the parchment paper once cooled. (However – I snitch a cookie or two while still warm, which means I have to scrape them off the parchment – crumbly, but worth it.) Makes about 36 cookies.
