Oatmeal Cookies

Oatmeal Cookies have become a real treat around here. While we had the restaurant we could have had one every day if we wanted, but since the closing of CJ’s we try not to have too many sweets in the house. So, if I want something sweet but not Super bad for me – Oatmeal Cookies. I love them absolutely plain and my husbands favorite would be Oatmeal Raisin. For this weekend, I chose to add some Craisins (Dried Cranberries) that I needed to use up. Turned out Very Yummy.

Oatmeal Cookies

3/4 cup Shortening

1/2 Cup Sugar

1 cup Brown Sugar

1 Egg

1/4 cup Buttermilk

1 tsp Vanilla

1 cup Flour

1 tsp Cinnamon

1/2 tsp Baking Soda

1/2 tsp Salt

3 cups Old Fashioned Oats

Preheat oven to 350 degrees.

Beat shortening and sugars together. Add egg, buttermilk and vanilla. Beat well.

In a separate bowl, combine the flour, cinnamon, soda and salt. Blend the dry ingredients into the shortening/sugar mixture. When well blended, stir in the oats. If you wish to add another ingredient, now is the time to stir them in.

Add 3/4 cup Raisins, Craisins, Pecans, Walnuts, Butterscotch Chips, any other chips or M & M’s. Or anything else you feel will make your cookies perfect.

Drop cookies by Tablespoon onto a parchment paper covered cookie sheet.

Bake for 12 to 14 minutes.
