Shrimp Scampi

One of my favorite meals when I go out to a good Italian Restaurant is Shrimp Scampi. Because I don’t go out to eat very often I needed to create my own. I hope you enjoy this as much as I do.

Shrimp Scampi

2 pounds raw Shrimp, peeled and deveined

1/4 cup Butter

2 T Olive Oil

1/2 cup fresh Lemon Juice

1/2 cup White Wine Vinegar

4 cloves Garlic, minced or pressed

1/2 cup Onion, diced small

1/2 cup Roma Tomato, seeded and diced small

1 can or jar Mushrooms, drained (can use Fresh)

1/2 cup fresh Basil, chopped

8 oz Angel Hair Pasta (cooked per package instructions)

You will need to cook your pasta at the same time as your shrimp. Neither takes more than a few minutes.

In a large frypan or wok, heat olive oil and butter. Add onion and sauté until the onion is clear. Add garlic and sauté for one more minute. Add lemon juice, white wine vinegar and shrimp. Stir often and cook until all shrimp are white and cooked through. Add tomato, mushrooms and basil. Stir and warm everything through. Add cooked, drained pasta. Toss and serve.

I add a little Italian blend shredded cheese on top.
