Billionaire Bars

This one is a bit putzy but so worth the time in the end. My husbands take on this bar is that it is “Ridiculous – but in a very good way”. I just love shortbread and caramel – so it’s a win win for me.

Billionaire Bars

Crust

1cup Butter – soft

1/2 cup Sugar

2 cups Flour

Dash Salt

Filling

1 can Sweetened Condensed Milk

1 cup Brown Sugar – well packed

1/2 cup Butter

1/2 cup Heavy Cream

1/2 cup light Corn Syrup

1/2 tsp Salt

1 tsp Vanilla

Topping

1 cup Milk Chocolate Chips

1/2 cup White Chocolate Chips

Preheat oven to 350 degrees.

Line a 9 x 13 pan with parchment paper or foil.

For crust – combine butter and sugar in a large bowl. Beat until mixture is light and fluffy (about 4 minutes). Add flour and salt. Mix well until crumbly. Press flat into the prepared pan.

Bake for 20 to 25 minutes until edges are a light golden brown. Remove from heat and cool while making caramel.

For Filling – Stir all ingredients (except vanilla) into a heavy saucepan. Cook over medium to medium low heat, stirring very frequently for 20 to 25 minutes or until thermometer reads 236 degrees. Being careful not to scald mixture. Pour over baked crust and spread evenly. Cool for 1 1/2 hours.

For Topping – in microwaveable bowl, melt milk chocolate chips on a low setting in the microwave – stirring often until smooth. Pour over caramel layer and spread evenly. In another microwaveable bowl, melt the white chocolate chips on a low setting in the microwave – stirring often until smooth. Pour the white chocolate over the milk chocolate layer in even lines, then with a clean knife or spreader swirl or streak the chocolates together to make a pleasing design. Chill for 20 minutes then at room temp for 20 minutes before cutting.
