Chocolate Pinwheel Cookies

Most people who know me would say, “Jan doesn’t really like Chocolate much”, and they would be right. If I am offered a choice of chocolate, vanilla or lemon – I’m much more likely to choose lemon or vanilla any day. For some reason most chocolate treats seem too rich for me. However, that said. I do enjoy lots of different chocolate treats. These cookies being one of them. They are a very nice mix of vanilla cookie and chocolate cookie. I think you will enjoy.

Chocolate Pinwheel Cookies

1 1/4 cups Butter, softened

1 1/2 cups Powdered Sugar

1 Egg

1 tsp Vanilla

3 Cups Four

1/4 tsp Salt

2 T Cocoa Powder

Blend butter, sugar, egg and vanilla. Slowly mix in flour and salt. Blend well.

Divide Dough into two. Set one half aside and add the cocoa powder to the other half. Blend well.

Roll out each dough ball into a rectangle approximately 12 inches by 6 inches. Try to keep them exactly the same size and shape. Wrap each rectangle in plastic wrap, place on a flat sheet pan and chill for at least one hour.

Preheat your oven to 400 degrees.

Unwrap each rectangle and place them one on top of the other. Starting at a long edge, carefully roll them up into a spiral shape. This recipe makes 24 cookies, so the easiest way to cut them is to start by cutting your spiral in half, then cut each half in half again. Then cut each quarter in half. Then cut those into thirds which makes each cookie approximately 1/2 inch thick. You will need a very sharp knife to keep your cookies round. A dull knife will just flatten your cookies.

Bake your cookies for 10 minutes. Or until the center no longer looks shiny. Edges should not be browned.
