Just about any muffin would be a crowd pleaser, but these Applesauce Muffins will please the baker as well. Super easy and the batter will keep for a few weeks if you want to keep making them fresh – like I do. There is nothing like a warm spicy muffin dripping in butter (I slather all breads in butter). I hope you enjoy – I certainly do.
Applesauce Muffins
1 cup Butter – soft
2 cups Sugar
2 Eggs
1 T Vanilla
4 cups Flour
2 tsp Soda
1 tsp ground Cloves
2 tsp Allspice
1 T Cinnamon
2 cups Applesauce
1/2 cup Buttermilk
Cream together the butter and sugar, then add the eggs and vanilla. In separate bowl, blend the flour, soda and spices. Add the flour mixture to the creamed mixture and blend well. Stir together the applesauce and buttermilk. Pour into batter and blend well. Batter will be a bit stiff. Spoon into prepared muffin cups to 2/3 full.
Crumble Topping – if you wish
2 T Butter – soft
2 T Sugar
1 T Flour
Dash Cinnamon and Nutmeg
Blend well and Sprinkle over tops of unbaked muffins
Bake Muffins at 400 degrees for 15 minutes or until firm when you touch the top. Makes approximately 4 dozen regular sized Muffins.
This muffin batter keeps up to two weeks in the refrigerator.
