Lemon Cream Icebox Pie

I’m a sucker for just about anything lemon. This pie is so good and so easy to make, you’ll want to make it all the time. It’s got a no-bake cookie crust and a really yummy no-bake cream cheese filling. What’s not to love! I hope you enjoy this one as much as I do.

Lemon Cream Icebox Pie

24 Golden Oreos (half a package) – Crushed fine

6 T Butter – melted

Blend and press into a 9 inch pie plate. Place in the freezer for 30 minutes.

4 oz Mascarpone Cheese

8 oz. Cream Cheese – soft

1/3 cup Fresh Lemon Juice

1 tsp Lemon Extract

1 – 14 oz can Sweetened Condensed Milk

In large bowl, whip mascarpone and cream cheese to fluffy. Slowly pour in lemon juice, lemon extract and sweetened condensed milk. Increase the speed of your mixer and whip for 2 minutes until thick and smooth.

Pour lemon filling into the frozen crust and chill for at least 4 hours.

Top with your choice of fresh fruit or whipped cream (or both).
