We almost always have more Bananas than we can eat. My husband and I both love them and often we both somehow end up buying some – not knowing that the other had just done the same. Which means they also often end up in bread or cookies – or like today, in Bars. We love this recipe. The bars stay nice and moist and the frosting is full of wonderful banana flavor as well. You can also freeze these bars and when thawed they are just as wonderful as the day you baked them. I hope you enjoy.
Banana Bars
2 (or more) ripe Bananas
1 T Lemon Juice
1/2 cup Shortening
1 cup Sugar
2 Eggs
1/3 cup Buttermilk
1 1/2 cups Flour
1/2 tsp Soda
1/4 tsp Salt
Preheat oven to 350 degrees.
In small bowl mash bananas with lemon juice.
I large bowl beat together shortening and sugar. Add eggs, mashed bananas and buttermilk. Blend well. Add flour, soda and salt and blend to smooth. Pour into a greased (or parchment lined) 9 x 13 pan. Bake for 25 to 30 minutes. Center should be firm. Do not over bake. Cool completely.
Banana Frosting
2 T Butter – soft
2 cups Powdered Sugar
1/4 tsp Salt
1 tsp Lemon Juice
1/2 (or more) Banana
In small mixing bowl, blend all and beat well until smooth and creamy. Pour over cooled bars and spread to edges.
These bars will freeze well.
