Who doesn’t like Special K Bars? These are a definite Ness Family Favorite. Kiddos ask for them whenever we plan get togethers and Nana and Papa love them too.
They make a wonderful no-bake treat when you want something but you don’t want to turn on the oven. Like right now when it’s in the 90’s here. They are so easy to make, all you need is a large pot or a large bowl to mix them in. You can double the topping if you like chocolate – leave it off completely if you don’t like chocolate at all. If you love cinnamon like my hubby, you can sprinkle some on before you top it with chocolate. The original recipe calls for 16 oz of marshmallow, but they don’t make 16 oz bags anymore. I can only find the 10 oz bags, but I like my bars nice and gooey, so I just add 2 whole bags. Those 4 extra ounces just adds to my gooey happiness. Special K Bars should be made however You like them.
Special K Bars
1 cup Corn Syrup
1 cup Sugar
1/2 cup Butter
1 cup Peanut Butter
1 – 16 oz Bag or 2 – 10 oz Bags Mini Marshmallows
11 cup Special K cereal
In a large kettle, combine the corn syrup and sugar. Bring to a boil for 1 minute. Add the butter and peanut butter. Melt. Add the marshmallows and stir until melted and well blended. Turn off heat and stir in the cereal. If your kettle is too small – pour cereal and marshmallow mixture in a large bowl. Mix until cereal is well coated.
Pour mixture into a well buttered jellyroll pan or half pan. (Or for extra thick bars us a 9 x 13 pan.) Press mixture to evenly distribute in the pan. I use disposable gloves that I have smeared with butter. Cool.
Chocolate Topping
1 cup Semi-Sweet Chocolate Chips
1/2 cup Peanut Butter
In a double boiler, or in a glass bowl in your microwave – slowly melt and stir together until smooth. Drizzle over completely cooled bars and spread to the edges. Allow to cool. Cut and enjoy!
